Made this quick dinner last night...and it was great. The original approach was to make Food Network Magazine's version of the same name, but I made a few changes due to not wanting to buy some items. Also, I wanted to use some other items in the fridge so I can get rid of them. The result came out great and definitely a go-to for a quick weeknight meal. The calories, however, were a bit high because, well, potatoes!
