This recipe came from not wanting to go to a drive-through, and really wanting to save some money on a Wednesday night. We had plenty of ingredients on hand, I just didn't know what to make. Some chicken cutlets were thawed, and while it was easy to make a grilled chicken salad, I had to throw out the spring mix because it was bad. The ripe mini tomatoes, however, were still good.
The result came out to be this quick and easy dish. I couldn't take all the credit, however, because this was inspired by Bon Appetit's March 2013 Parmesan Chicken Cutlets recipe. Even though I usually cringed at simple recipes using too many utensils to make only one dish, I stopped being stubborn at made this concoction. The recipe yields 4 servings.
