Roasted Chicken + Onions + Potatoes + Gravy / by Rattaya Nagorski

I came upon this recipe in the cookbook from Cooking Light, titled Cooking Light Comfort Food. Most of the dishes I'd pulled from this publisher have been wonderful, but this roasted chicken have failed in taste and flavor, but definitely has given me the confidence in roasting whole chickens. Sorry I don't have a finished picture, so this one will have to do!
