Ok, enough dorkiness from me, here's a baked salmon dish with a pow. The combination of cider vinegar and maple syrup is quite pungent, add in bacon, and voila, a sharp tasting salmon dish that did not disappoint. Serve it with milder side dish, such as rice or couscous, and roasted vegetables. The taste from the salmon takes over the whole palate already.
